Bananas getting too ripe?  Perfect, because this recipe for lovely, easy banana muffins uses staple ingredients you have in your pantry and/or fridge already.  These muffins are so moist and delightful, the recipe will surely become a go-to.


The recipe is so super easy, this one can be a beginner recipe for the kiddos, too.  No electric mixer necessary.  Oh, and did I mention that it’s also budget-friendly?  So, what are you waiting for, take a peek at the list and get your ingredients together!

While you were doing that, I thought of a useful little tidbit about flour options.  I used self-rising flour this time only because my canister needed to be refilled and I was anxious for the finished product!  The recipe uses all-purpose flour but I substituted self-rising flour by omitting the baking powder.  The muffins weren’t quite as sweet, due to the added salt in the self-rising flour, but they still rose beautifully and were quite delicious.

Make Your Own Self-Rising Flour

Here’s that little tip to tuck away if  you ever need to improvise:  To make your own self-rising flour using all purpose flour, add 1-1/2 teaspoons baking powder and 1/2 teaspoon salt per cup of all purpose flour.  Stir together the flour, salt, and baking powder, and there you have it, self-rising flour.  If you want to get really technical, you can choose to remove two teaspoons of flour so you have an even cup of flour.

             

 

 

 

 

 

Now, back to the recipe.  Let’s whip it together and get it in the oven!  You pretty much just measure your ingredients, toss them into the bowl and stir.  How much easier can you get, and with just a handful of ingredients!

As you can see, I used a mini loaf pan, but the recipe works the same for a muffin pan.  It definitely tastes the same and that’s what matters most, right?  There are many variables for this recipe.  You could add blueberries or cranberries or even some bacon bits into the mix then a smear of peanut butter on top!

Easy Banana Muffins

So easy and delicious, this banana bread will surely be one of your favorites!

Ingredients

  • 2 c all purpose flour
  • 1 c sugar
  • 1 t baking soda
  • 1 t baking powder
  • 1 c mayonnaise
  • 3-4 bananas, mashed
  • ¾ c chopped pecans, optional

Instructions

  • Preheat oven to 375°.
  • Grease 12 muffin cups or line with muffin liners.
  • Stir together flour, baking powder, baking soda, sugar, mayonnaise, and bananas until combined.
  • Stir in pecans.
  • Pour into prepared muffins cups to about 2/3 full.
  • Bake in preheated oven about 20 minutes, until golden brown and tops spring back.
